Súper góð og einföld súkkulaðikaka með kókós kremi / Super good and simple chocolate cake with coconut cream

Ég hef ávalt staðið í þeirri meiningu að ég sé lélegur bakari og alltaf fundist kökubakstur vera algjört vesen. Ég á ekki vog svo að ég hef ekki hugmynd hvað 200 gr. af hveiti eru mikið, ég á ekki fín bökunarmót til að setja deigið í svo að ég hef bara ekki nennt að baka eitthvað þegar að ég get fengið betri köku út í næsta bakaríi. En nú er breyting á því ég hef fengið algjörlega skothelda súkkulaðiköku uppskrift sem er lítið mál að græja. Ég set deigið líka í eldfast mót, en ég legg örk af smjörpappír í mótið til að kakan festist ekki við mótið.

1 1/2 bolli hveiti
1 1/4 bolli sykur
1/2 bolli kakó
3/4 tsk salt
1 1/4 tsk matarsódi
2/3 bolli súrmjólk eða jógúrt má vera mjólk (ég notaði vanillu jógúrt)
2/3 bollar brætt/mjúkt smjör
1 tsk vanilludropar
1/3 bolli mjólk
2 egg

Blandið öllu saman nema eggjum í 2 mín með þeytara eða í hrærivél. Bætið eggjum saman við og hrærið í 2 mín í viðbót. Bakið við 180 gráðum. eða 160 gráðum á blæstri í 30 - 40 mín.

Krem
1 - 1 1/2 bolli flórsykur
2 -3 msk kakó
4 -5 msk mjúkt/brætt smjör
2 msk kókósolía

Öllu hrært súper vel með þeytara eða hrærivél í 4-5 mín


Super good and simple chocolate cake with coconut cream

I've always felt like I'm a poor baker and always found baking being a complete hassle. I do not have scales so I have no idea how much 200 gr. of wheat is and I don´t have a super cool bake ware to put the dough in. I just don´t bother to bake something when I can buy something that tastes and looks better in the bakery. But now it's different  because I have gotten a completely bulletproof chocolate cake recipe. I put the dough in a medium size ovenproof dish (I used this one, http://tinyurl.com/c3o9mmv), but I cover the mold with a sheet baking paper so the cake dose not get stuck.

1 1/2 cup flour
1 1/4 cup sugar
1/2 cup cocoa powder
3/4 teaspoon salt
1 1/4 teaspoon baking soda
2/3 cup buttermilk or yogurt may us milk (I used vanilla yogurt)
2/3 cups melted/soft butter
1 teaspoon vanilla extract
1/3 cup milk
2 eggs

Mix everything together except the eggs for 2 minutes with a mixer. Add the eggs together and stir for 2 more minutes. Bake at 180 degrees or 160 degrees if you use the fan for a 30 - 40 min.

Cream
1 to 1 1/2 cup powdered sugar
2 -3 tbsp cocoa powder
4 -5 tbsp soft/melted butter
2 tbsp coconut oil

Mix everything super well with a mixer for 4-5 minutes
